I am a very good sushi chef after years of making it for my huge family. Avocado and salmon rolls are one of our favourite types of sushi! One thing you really need to make good Sushi is a good set of Japanese knives. I prefer stainless steel to those with a carbon edge because of ease of maintenance. The most important thing to remember in caring for a knife is to sharpen it properly. This will minimize frustration when cooking in the kitchen. Do not underestimate the difference it makes.
